There is a chill in the air and it is calling for soup

Our season is changing and it is time to make soup! What is your favorite soup? During this season there are so many options so try something new or create your version of a seasonal soup. Pumpkin or Butternut quash are my favorites and so easy to make.

Most grocery stores have fresh pumpkin or butternut quash already cubed up for you to make the preparation easy. It's soup so how hard can it be?


  • Start with cutting into cubes the pumpkin or butternut squash and boil with your favorite brand of vegetable or chicken stock, about 2 cups

  • I love the healthy benefits of garlic, so chop up at least 2 gloves. Add that to the pot

  • Salt and Pepper to your taste.

  • For a little kick add little crushed pepper. If you like a bit more aromatic flavor and aroma add nutmeg or allspice

  • Add a little chopped onion if you like. Boil the contents until the pumpkin or squash is tender.

  • Use your immersion blender to create a smooth textured soup. Add more stock if you need it.

  • Taste test and adjust the seasoning to your liking.

  • For a more creamer taste add a little coconut milk.


Serve with roasted pumpkin seeds or not, do whatever suits you. Serve with grilled cheese sandwiches.
